- 3-4 pound pork loin
- 1 tbsp. avocado oil
- salt and pepper
- 2 tbsp. minced garlic
- 1/3 cup light brown SWERVE
- 4-8 slices thick cut bacon (depends on size of loin(s)
- Preheat the oven to 350 degrees.
Place the loin(s) into a 9×13 pyrex glass baking dish (You can also make this in a slow cooker on low for 6-8 hours)
Rub the avocado oil and salt and pepper into the loins.
Add the garlic on top of the pork loins.
Wrap the pork loin with bacon–we had 4 small pork loins and added one piece to each piece.
Sprinkle brown sugar to the top of the pork wrapped bacon.
Cook in the oven for about one hour or until juices run clear.
