IT IS FALL! I love all the pumpkin, apple and maple things this time of year! I wanted to make some maple flavored muffins that tastes delish and these hit the spot! They are also low carb / keto / sugar free / gluten free and all that good stuff! I am using ChocZero Sugar-Free Maple Pecan Syrup for the flavor and it is sooo good! - 1 cup almond flour
- 2 tsp. baking powder
- 1/4 cup melted butter
- 2 eggs
- 2 tsp. almond milk
- 1/4 cup granulated monkfuit sweetener
- 1/4 cup maple pecan syrup by Choc Zero
- 1 tsp. vanilla
- 1/4 tsp. salt
- 1 tsp. cinnamon
- 2 tbsp. cup sour cream
- 2 tbsp. psyllium husks (can be omitted)
- pinch of salt
Preheat oven to 350 degrees.
- Place silicone muffin holders in a muffin tin.
In a large bowl or mixer cream the granulated monkfruit, vanilla, cinnamon, sour cream, almond milk, syrup and butter until combined.
Fold in the remaining ingredients and mix until fully incorporated.
Divide and muffin mixture into the muffin holders until each one is full to the top (you can also make smaller muffins and make 12 by filling 1/2 way)
Bake for 20-25 minutes or until firm; then cool to serve.
