IT IS PUMPKIN SEASON!!! YUMMY!!! These pumpkin custard tarts remind me of a cross between a yummy egg loaf and a flan. SO SO GOOD and everyone in the family loves them! Top with whipped cream, strawberries or more pumpkin pie spice! These are about 1 net carb each and sooooooo worth it!
- 2 eggs
- 2 tbsp. granulated monkfruit blend or granulated swerve
- 1 tsp. vanilla
- 1/4 cup heavy cream
- 1/2 cup almond milk
- 1/4 cup pumpkin puree
- 1/4 tsp. pumpkin pie spice
Preheat oven to 350 degrees.
In a large bowl or mixer combine all of the ingredients and whisk until fully incorporated.
Divide and pour the custard mixture into the muffin holders until about half full.
Bake for 30-35 minutes or until firm; then cool to serve.
